When the pandemic hit, Houston Chef and Restaurateur Hugo Ortega didn’t know what was going to happen with the small company he started 37 years ago that counted 400 employees in its ranks.

He responded by awaiting the go-ahead from the Texas state governor that declared his company an essential business and pivoted to set up small farmers’ markets inside each of his Houston restaurants that sold goods from local business partners and created to-go meals for grocery stores.

“We feel a sense of gratitude for the employees who have worked so hard during this two-month period,” Ortega told bonappetit.com after reopening the dining room of Hugo’s in mid-May. “…the managers washing dishes and servers mopping floors. Everyone in the restaurant feels this uneasiness, like you can’t let your guard down. But I think the reason people are coming to our restaurant is that they trust us.”
