An inspiring lesson in perseverance and resolve in the face of seemingly insurmountable odds (sound familiar?) in a recent feature on Canadian Chef Chanthy Yen in Bon Appetit Magazine.
Yen was Executive Chef at the British pub-styled Montreal restaurant Parliament before the pandemic forced it to close. In May, Yen planted a pivot and used the space to open Touk — a Cambodian street-food pop-up that became an overnight success.
