Congrats, Eva!
A BIG congratulations to Eva Chin, who has taken her culinary talents across the country to step into the role of CDC at Momofuku Toronto’s kōjin.
Prior to her new post, Eva led the back-of-house team at Royal Dinette, helping that restaurant earn Vancouver Magazine’s nod for Best Pacific Northwest Restaurant in 2017. More recently she was a familiar face on the line at Boulevard Kitchen & Oyster Bar, where she became an integral part of an uber-talented kitchen cadre that included such award-winning chefs as Alex Chen, Roger Ma, Daniel Kim and Kenta Takahashi.
Eva grew up on her grandmother’s farm in Kahuku, Oahu, where she learned to cook food in earth ovens called ‘imu’, using weathered rocks as embers, and learned a proud family tradition of harvesting, butchery and respecting all that the land and sea provides. She went on to cook in Michelin-starred kitchens all over the world, from Japan to Norway to Australia.
Adaptation
After lockdown orders came into effect across the province in March, Tre Mari Italian Bakery took a breath and then quickly shifted to taking orders online and using Instagram to highlight their offerings and spread awareness.
They launched free home delivery and began bringing their signature cannolis, Italian buns and prepared foods directly to their consumers’ doors — something they hadn’t done since the 1960s.
In a recent article in Menu Magazine, Alexandra Cioppa documents how Tre Mari rolled with the punches and adapted on the fly, harnessing the power of social media and online platforms to stay relevant and connect with faithful, longtime fans and new customers alike. Read more:
